Mexican Eggplant

Ingredients

eggplant sliced 1/2" thick

provolone cheese slices or monterrey jack

1 can enchilada sauce mild or medium

olive oil spray

sour cream optional

Directions

Slice eggplant and arrange in a single layer on olive oil sprayed cookie sheet. Spray tops of slices with olive oil spray. Bake for 30-40 minutes at 400 degrees.
Arrange eggplant slices in stacks with slices of cheese. Pour enchilada sauce over all. Bake, uncovered, for 30-45 minutes at 350 degrees. To serve, top with sour cream.

Serving Ideas: Serve with green salad dressed with olive oil & lemon juice.
